Sauces

Want to master sauces?  This versatile workshop covers six essential sauces, which will transform your cooking repertoire.

​

In this 2.5 hr workshop, you will make:

 

  1. A delicious nourishing broth to take home, reduce and turn into the most incredible Restaurant Grade Gravy

  2. Mormor’s amazing Ten-Minute Mid-Week Gravy

  3. A timeless Hollandaise, for everyones favourite Eggs Benedict

  4. Tarragon & Dijon Mayonnaise

  5. A Classic French Vinaigrette 

  6. Vietnamese Nahm Prik 

 

You will enjoy eggs benedict at the end of the class & be given your sauces to takeaway to enjoy at home along with full recipe sheets.

 

We will also discuss and learn different ways to build on your new repertoire to create fantastic show stopping feasts at home and discuss ‘The five flavours’ and how to balance them.

Fish Filleting & Preparation

Love Fish but are not sure how to prepare it properly?

 

In this 2.5 hr session, you will learn:

 

  1. How to fillet a round fish – scale it, pin bone and prepare it to be pan ready

  2. Prepare and cook a flat fish for pan roasting

 

We will discuss:

 

  1. How to look for fresh fish and where to buy it from

  2. Cover the topic of farmed vs wild caught fish and how different fishing practices affect the quality of the fish you buy.

  3. Ben will also share some other hints and tips that he has learnt whilst travelling the world on superyachts – from buying from the most expensive super yacht provisioning companies to shopping in local markets or from local fishermen.

  4. As a keen fishermen himself, Ben will also talk through his various fishing adventures he had in Alaska, Mexico, Costa Rica and stories from Japanese squid boats to the Radioactive salmon from the questionable east coast of Russia.

 

We will cook:

 

  1. Your prepared Flat fish, with some delicious local organic seasonal vegetables for you to eat after the fish filleting is complete.
