These are awesome to have in the freezer or fridge for when you need a little pick me up or the children start bleating some bizarre hunger noises. Packed full of seeds and slow release energy, they go a long way.
Ingredients - makes 12 bars
300g pitted dates - or 2 cups
150g mixed seeds - or 1 cup (sunflower/pumpkin)
75g oats - or 1 cup
40g desiccated coconut - or 1/2 cup
2 tablespoons Cocoa powder
Maldon Sea salt pinch
Top with:
200g dark chocolate
1 tablespoon coconut oil or butter
Extra pinch of sea salt
Method:
1. Soak the dates in a bowl with boiling water.
2. Meanwhile blend the oats, seeds, coconut & cocoa powder in a blender. Blend it fine or leave it coarse for more texture if you prefer.
3. Drain the dates and add them to the blender.
4. Blend until it looks like a thick paste. If it looks dry add a dash of hot water and blend again.
5. Spread the mix into a parchment lined tin.
6. Melt the chocolate and coconut oil or butter together in the microwave or in a bowl over simmering water. Then divide between the loaf tins.
7. Set in the fridge for 1 hour then cut into bars or squares.
Keep in the fridge for 1 week or freeze - if you can keep them that long.
