From Caramelised Potatoes to Roast Goose, it's a Scandi / Sussex feast for the Cooke's...
"Baby Cooke two arrives mid-December. With that, and Uffa who's five, and launching The Lille Cabin (online cookery classes and studio) and teaching the Superyacht Hospitality course at UK Sailing Academy , we're busy.
We'll be with my family, the Danish side, this Christmas on the Isle of Wight. Normally Holly & I look after the main course but with the new baby, Mum will do it. We'll have a beautiful cut of meat or bird, turkey, rib of beef, goose, pork. There'll be pickled red cabbage and caramelised potatoes, my mormor's (grandmother's) speciality. She would boil boil and peel potatoes, making a butter caramel and caramelise the potatoes from cold. So good!
We'll go to midnight mass at Quarr Abbey, a Benedictine monastery near Ryde. It's peaceful. We'll reflect on the year gone, and plan for the one to come. I love cold water swimming so I'll make some time for that. And whether we're with my Danish family or Holly's family in Sussex, everything stops for The Queen's Speech! "
